Italian Spaghetti Sauce with Meatballs

Moni’s Sauce

Ingredients

Ingredient Quantity
Onion (chopped) 1/2 cup
Garlic (chopped) 2 cloves
Olive Oil 2-3 tbsp
Diced Tomatoes 2 28oz cans
Tomato Paste 1 small can
Chicken Broth 21 oz (1 1/2 cans)
Oregano 1/2 tsp
Basil 1/2 tsp
Sugar 2 tsp
Salt 1 tsp
Pepper dash

Note: You can substitute italian seasoning for the basil and oregano, if desired.

Steps

  1. Saute onions in olive oil in large stock pot until translucent.
  2. Add garlic and saute. Do not burn it
  3. Add all the tomatoes, chicken broth, oregano, basil, sugar, salt and pepper.
  4. Simmer for 1-2 hours (add meatballs during this time).

Auntie Marilyn’s Meatballs

Ingredients

Ingredient Quantity
Hamburger (browned) 1 lb
Large Egg 1
Grated Italian Cheese 1 handful
Bread Soaked in Water 3 slices
Salt to taste
Pepper to taste
Oregano a pinch
Garlic (chopped) 1 clove
Onion (chopped) 1

Steps

  1. Mix everything together and form meatballs.
  2. Add meatballs to simmering sauce.
  3. Cook for approximately 1 1/2 hours.
  4. Ensure the largest meatballs reach an internal temperature of at least 165ºF.
