Ingredients

Lean Ground Beef 2 lbs
Onion 1 small/medium (to taste)
Bell Pepper (red or green) 1
Diced Tomatoes 1 40oz (3 14.5oz cans)
Crushed Tomatoes 28 oz (1 can)
Dark Red Kidney Beans 16 oz (1 can)
Garbanzo Beans (chickpeas) 16 oz (1 can)
White Kidney Beans 2 16 oz (1 can)
Chili Mix 1 package
Salt to taste
Pepper to taste

Steps

  1. Brown the ground beef. Breaking them into smaller pieces (think taco meat). Drain excess fat if needed.
  2. Toss in half of the onion and turn to low heat/simmer and cover for 15 minutes to get onion flavor in the beef.
  3. Add all the cans of tomatoes and chilli mix, simmer for 45 minutes.3
  4. Add everything else (remaining onion, bell pepper, beans (with liquid), salt, and pepper). Simmer for another 30 minutes.

  1. Alternative: Use 2 16oz cans of Diced Tomatoes with Green Chili for a little extra zing. ↩︎

  2. Optional: Depends on how many beans you want. You can swap for a different kind of bean if desired. ↩︎

  3. To save time, in the past, I’ve combined the final two steps to skip the 2nd 30 minute simmer. ↩︎
