Equipment

  • Oven safe cooling/cooking rack
  • Cooking pan that fits the cooking rack

Ingredients

Bone-In Skin-on Chicken Thighs ~5lbs (family pack)
Pam / Non-stick spray to taste
Montreal Chicken / seasoning to taste

Steps

  1. Put the cooking rack into the cooking pan and spray with non-stick spray (or grease the rack some other way).
  2. Put chicken on the cooking rack with skin up, evenly spaced so there is room to breathe between pieces.
  3. Spray chicken with the cooking spray and sprinkle the seasonings on the chicken, to taste.
  4. Preheat oven to 390ºF and cook chicken for about 45 minutes.
  5. Optional: Set oven to broil, move the chicken to the top of the oven and broil for 1-3 minutes until the skin is crispy.
  6. Remove when the thickest part of the chicken temps to 165ºF.
  7. Let stand for 3-5 minutes before serving.
