Moni’s Sauce
Ingredients

| Onion (chopped) | 1/2 cup |
| Garlic (chopped) | 2 cloves |
| Olive Oil | 2-3 tbsp |
| Diced Tomatoes | 2 28oz cans |
| Tomato Paste | 1 small can |
| Chicken Broth | 21 oz (1 1/2 cans) |
| Oregano | 1/2 tsp |
| Basil | 1/2 tsp |
| Sugar | 2 tsp |
| Salt | 1 tsp |
| Pepper | dash |
Note: You can substitute italian seasoning for the basil and oregano, if desired.
Steps
- Saute onions in olive oil in large stock pot until translucent.
- Add garlic and saute. Do not burn it
- Add all the tomatoes, chicken broth, oregano, basil, sugar, salt and pepper.
- Simmer for 1-2 hours (add meatballs during this time).
Auntie Marilyn’s Meatballs
Ingredients

| Hamburger (browned) | 1 lb |
| Large Egg | 1 |
| Grated Italian Cheese | 1 handful |
| Bread Soaked in Water | 3 slices |
| Salt | to taste |
| Pepper | to taste |
| Oregano | a pinch |
| Garlic (chopped) | 1 clove |
| Onion (chopped) | 1 |
Steps
- Mix everything together and form meatballs.
- Add meatballs to simmering sauce.
- Cook for approximately 1 1/2 hours.
- Ensure the largest meatballs reach an internal temperature of at least 165ºF.
