Regular Batter

Ingredients

Ingredient Quantity
All Purpose Flour 2 1/2 cups (~375g)
Baking Powder 2 tbsp
Sugar 2 tbsp
Salt 1 tsp
Egg (beaten) 2
Milk (Whole) 2 cups
Oil 2/3 cup
Water as needed (~1/4 cup)

Chocolate Batter

Ingredients

Ingredient Quantity
All Purpose Flour 2 1/2 cups (~375g)
Baking Powder 2 tbsp
Sugar 6 tbsp
Salt 1 tsp
Egg (beaten) 2
Milk (Whole) 2 1/4 cups
Oil 2/3 cup
Water as needed (~1/4 cup)
Unsweetened Cocoa Powder 2/3 cup

Use 1/3 cup of cocoa powder and an extra 2 tbsp of sugar if you want to make chocolate batter halfway through a regular batch of batter.

Batter Steps

  1. Whisk dry ingredients together in a large mixing bowl
  2. Stir in wet ingredients until well mixed.
  3. Optional: Let batter sit for 10-20 minutes or until it starts to bubble. If you warm the milk in the microwave, you can speed this step up.

Pancakes

10" Cast Iron Skillet

  1. Preheat for about 10 minutes. 1
  2. Put a thin layer of oil on the cast iron skillet.
  3. Use 1/2 cup ladle or similar to pour a pancake.

Single batch makes about 8 8" pancakes.

Electric Griddle

  1. Preheat griddle to 375ºF for about 10 minutes.
  2. Use 1/4 cup measuring cup to pour. I can fit about 6 of these per set on my griddle.

Single batch makes about 24 4" pancakes.

Cooking Directions

  1. Watch for bubbling.
  2. Once bubbling slows down, flip it. 2

Waffles

  1. Preheat waffle iron on highest setting.
  2. Use half-cup ladle or similar to pour batter into iron. This will depend on your waffle iron.
  3. Cook until steam stops or until waffle iron says it’s done.
  4. Optional: Flip and cook a little bit more for good measure.
  5. Remove and enjoy.

  2. Sometimes, you can flip it at peak bubbling depending on factors. You’ll have to learn the best time to flip it. It can depend on placement of pancake and cooktop used. ↩︎
