Ingredients

Butternut Squash 2 medium-large
Macintosh Apples 6
Light Brown Sugar 1 1/2 cups
Pumpkin Pie Spice 1 tbsp

Steps

  1. Peel and cube the squash.
  2. Peel and slice the apples.
  3. Put the squash and apples into a large glass bowl.
  4. In a small bowl, mix brown sugar and the pumpkin pie spice.
  5. Pour the sugar-spice mixture over the squash and apples.
  6. Heat in the microwave on high for 5 minutes1.
  7. Stir and repeat heating in the microwave for 5 minutes at a time until squash is mushy.

  1. If you split it into 2 dishes, start each dish in the microwave for about 5-10 minutes until there is a bit of liquid (so it boils). Then bake it in the oven at 300º-350º while having each dish take turns in the microwave/oven every 5 minutes. ↩︎
