Steps
Cooking the Beans
- Clean the beans by taking off the stringy ends, etc.
- Parboil beans for about 10 minutes and drain.
- In a large frying pan, over low heat, add the olive oil and butter.
- When the butter is melted but not burned and the oil is hot, add the diced onion.
- Add pepper and garlic powder.
- Cook onions until almost translucent.
- Add the string beans.
- Add more pepper and garlic powder.
- Stir everything well. Cover and cook over low heat for about 1 1/2 hours.
- Stir occasionally to ensure nothing burns and add more pepper or garlic as desired.
- Taste a bean to see if it’s done. If done, take cover off and raise heat to let some moisture out.
Final Assembly
- In a casserole dish, put a layer of beans and sprinkle some parmesan cheese over the beans.
- Repeatedly add layers of beans and parmesan cheese until all beans are used.
