Flat-Top Station Card

36" Griddle — Sides & Cooks

Sorted by lead time, not by type. The thing that fails on a flat top is dense food that browns before it cooks through — so start from the left, sear the filets last.

Stage the surface — 4 burners, 3 jobs

BURNER 1
Sear
Filets, scallops, smashed burgers. Hottest.
BURNER 2
Brown
Mushrooms, sprouts, char veg.
BURNER 3
Cook
Rice, noodles, smashed potatoes.
BURNER 4
Hold
Caramelize onions; park finished food.

Filets own the sear zone for ~6 min total. Everything else gets staged so it's done or holding by the time the steak goes down.
